A slice of cake for only 3 points on Weightwatchers ... this recipe rocks my world at the moment!
One of my awesome friends came around this weekend, with her rather handsome 'almost one year-old, and I just had to bake a little treat for us all. I am a huge fan of tea and cake so I am always looking for new recipes that ensure I can still enjoy this but without falling of the wagon. This Citrus Sponge Cake is a huge favourite of mine and here is how you can make it:
Ingredients:
3 medium eggs
75g grams of sweetener
2 medium lemons
75g plain flour
25g icing sugar
Low Calorie Spray
How to make the cake:
- Preheat the oven to gas mark 5 or 190*C
- Spray a round cake tin with the low calorie spray and spread to ensure the whole tin is covered - essential for avoiding sticking
- In a large bowl (in my case a particularly bright pink bowl) whisk the eggs with the sweetener and the zest of one lemon. I use an electric whisk, which I hugely recommend, as it takes around 5 minutes to get the mixture nice and thick but airy
- Gently fold in the flour
- Transfer the mixture into the round tin and level it out
- Bake the cake for 10-12 minutes. The cake will feel slightly spongey so don't panic - but it should also go a nice golden colour on the top. DO NOT expect it to rise huge amounts, and it will be approximately an inch or so high (Note when removed from the over do not remove from the tin)
- In a small saucepan add the zest of the other lemon, and the juice of both lemons, as well as the icing sugar. Heat this gently so it comes to the boil
- With a fork prick the top of the cake and then pour the juice and icing sugar mixture over the top
- Leave the cake in the tin to cool with the juice and icing sugar sinking into it
- Once cool remove
- I decorated with a few blueberries and some silver balls (I obviously avoided the silver balls)
An 1/8th of the cake is 3 propoint's so cut a slice and enjoy!
