When I first started Weightwatcher's 3 years ago I was very dedicated to sticking to it, however after 2 years I started to binge eat and it was mainly due to the fact I wasn't varying my diet. I lived of chicken and prawn salads, with carbs being the devil. Since rejoining I made a pact with myself to try new things and create new recipes - my husband also massively appreciates this and the poor man was "enduring the food" I was eating (his words). I have definitely learnt to experiment and if you see a recipe you love but it is high in calories and points then adapt it to suit you. It is doable - and if it doesn't taste great then at least you learnt (I will never be trying turkey meatballs again after learning my lesson)
Ingredients:
120g Chicken Breast
Can of Chopped Tomatoes
Garlic Clove
Pinch of Salt
Pinch of Pepper
1 x Red Pepper
1 x Chopped Onion
15g Cheddar Cheese
50g Potato
1 Egg
1 Slice of Hovis Nimble Bread
Low Calories Spray
How to:
- In a saucepan add the chopped tomatoes; finely chopped garlic glove; red pepper chopped; finely chopped onion and a pinch of salt and pepper. Simmer this on the hob for 30 minutes
- "Blitz" you slice of nimble bread so that it becomes breadcrumbs. I use my smoothie maker for this, as it does the job, and it is on my kitchen side smiling at me to be used. Transfer the breadcrumbs to a shallow bowl. In another shallow bowl crack an egg and mix
- You also have time to prepare your spuds now. Take a couple of potatoes (weighing 50g) and peel and chop into cubes. Cover in Low Calorie Spray and transfer to a baking tray
- After 30 minutes remove the pan from the hob and "blitz" the contents so it becomes a puree. I use the smoothie maker again
- Bash your chicken with a rolling pin to flatten it slightly (not too much as no one wants a pancake)
- Prepare a frying pan with a couple of sprays of low calorie spray and put on a low heat
- Take your piece of chicken and place in the bowl with the egg and cover it with eggy loveliness. Then transfer the chicken to the breadcrumbs and cover both sides, and then into the frying pan for a couple of minutes either side to make it a little crispy. Put chicken on the baking tray with the potatoes
- Place the tray in the oven for 40 minutes 180*C, or until chicken juices run clear and potatoes don't taste raw
To serve:
- Reheat the sauce and pour over the chicken with a sprinkling of the cheese
- Great with carrots and broccoli!
